    Pomegranate Poinsettia Cocktail

    When it comes to celebratory holiday drinks, you can't really get more festive than this pomegranate poinsettia cocktail. Essentially, it's just a gussied up take on the classic poinsettia, which features cranberry juice. But this pomegranate version is my favorite. It is similarly crisp, sweet, and tart, but without any trace of bitterness on the finish. And most of the time I prefer the character of my holiday cocktails to match the merriness of the mood, don't you? This one strikes a perfectly magnanimous tone.

    This cocktail pairs beautifully with all sorts of salty party snacks, including pancetta stuffed mushrooms and fontina & prosciutto toasts.

    • Cointreau
    • fresh lime juice
    • Prosecco
    • pomegranate arils, to garnish (optional)
    • lime twist, to garnish (optional)

    Instructions for a Pomegranate Poinsettia Cocktail

    Pour the pomegranate juice into a champagne flute.

    Add the Cointreau.

    Add the lime juice.

    Then top with the Prosecco.

    Give the drink a quick stir.

    Finally, garnish with a few pomegranate arils (and perhaps a twist of lime), if desired.

    Serve immediately.

    Hint: While a classic poinsettia contains only three ingredients, namely Prosecco, orange liqueur, and cranberry juice, this pomegranate version includes a fourth...lime juice. A little splash of lime just seems to balance and bring all the flavors together.

    Variations

    • Prosecco...Although Prosecco is the traditional choice of sparkler for a poinsettia cocktail, you could certainly use any sort of sparkling wine here. Cava is another lovely option.
    • Cointreau...Cointreau is the best choice when it comes to the orange liqueur element, but you can substitute Grand Marnier in a pinch.
    • To Garnish...It's entirely optional, but sprinkling a few fresh pomegranate arils into this drink is an easy and festive touch. (And if you prefer not to mess with extracting them from a whole pomegranate yourself, you can often find them pre-packaged in the produce aisle.) And a lime twist is a nice addition if you don't mind fiddling with citrus peels.

    Top tip

    Serving pomegranate poinsettia cocktails for a crowd? Simple as mince pie, since you can easily prepare the pomegranate mixture in advance. In a medium pitcher, just mix together the pomegranate juice, Cointreau, and lime juice. Then refrigerate until ready to toast. When your guests arrive, all you have to do is pour 3 ounces of the pomegranate mixture into each champagne flute before topping with the Prosecco!
