There is nothing quite like biting into a perfectly ripe peach on a lazy summer day, but a spoonful of peach simple syrup sure tastes like a worthy tribute. Intensely sweet-tart in flavor and beautifully blush pink in color, this syrup puts the tantalizing flavor of ripe peaches at your fingertips. It's perfect in cocktails, iced tea, lemonade, or basically anything that could use a redolent reminder of all that late summer bounty.

Ingredients for Peach Simple Syrup
- fresh ripe peach
- sugar
- water

Instructions for Peach Simple Syrup
Place the water and sugar in a small saucepan. Over medium heat, stir until the sugar has dissolved. (This will only take a couple of minutes.)
Carefully add the peach slices and give the mixture a quick stir just to combine.
Turn the heat down to low and simmer the mixture undisturbed for about 10 to 15 minutes. Remove the saucepan from the heat and allow the mixture to cool for at least 30 minutes.
Strain the mixture to separate the peach remnants from the syrup. (The remnants can either just be discarded or mixed into your next bowl of yogurt or ice cream.)
Pour the syrup into a small jar or bottle and refrigerate.
Hint: If you're feeling fancy, this syrup can easily be embellished with a splash of lemon juice or a few drops of orgeat.
Storage
Peach simple syrup will keep in the refrigerator (in a sealed container) for up to two weeks.
