Peach Simple Syrup

There is nothing quite like biting into a perfectly ripe peach on a lazy summer day, but a spoonful of peach simple syrup sure tastes like a worthy tribute. Intensely sweet-tart in flavor and beautifully blush pink in color, this syrup puts the tantalizing flavor of ripe peaches at your fingertips. It's perfect in cocktails, iced tea, lemonade, or basically anything that could use a redolent reminder of all that late summer bounty.

Ingredients

  • 1 large ripe peach pitted and cut into slices
  • ½ cup sugar
  • ½ cup water

Instructions

  • Place the water and sugar in a small saucepan. Over medium heat, stir until the sugar has dissolved. (This will only take a couple of minutes.)
  • Add the peach slices and give the mixture a quick stir just to combine.
  • Turn the heat down to low and simmer the mixture undisturbed for about 10 to 15 minutes.  Remove the saucepan from the heat and allow the mixture to cool for at least 30 minutes.
  • Strain the mixture to separate the peach remnants from the syrup.
  • Pour the syrup into a small jar or bottle and refrigerate.
