    Champagne Cocktail

    Featured prominently in the iconic film Casablanca, the first recorded mention of the "champagne cocktail" actually goes all the way back to the 1800's. In other words, this is a tipple that has been around for a very long time. Not nearly as old as the cosmos, perhaps...but sure feels like drinking a glass full of stars.

    Ingredients for a Champagne Cocktail

    • Angostura bitters
    • Cognac
    • Champagne

    Instructions for a Champagne Cocktail

    Place the sugar in a coupe glass.

    Add the bitters.

    Then pour in the Cognac.

    Top with chilled Champagne.

    Serve immediately.

    Hint: A coupe glass is traditional for this cocktail (and truly works best here), so keep those tall Champagne flutes in the cupboard!

    Variations

    • The Sugar: Have some sugar cubes on hand? You can substitute one small white sugar cube for the half teaspoon of granulated sugar if you'd like a bit of flourish in your glass. (The cube will dissolve slowly as you sip.)
    • The Cognac: Prefer a bit more kick in this cocktail? Simply increase the Cognac to a full ounce.
    • To Garnish: While this drink needs no garnish, in my humble opinion, I recommend a lemon or orange twist if you prefer to add one.

    Top tip

    When it comes to selecting a specific bottle of Champagne for this drink, go for one that is dry in style. (You'll be adding sweetness to the mix with the other ingredients.) In other words, choose one that is labeled Brut or Extra Brut.

    • 2 or 3 dashes Angostura bitters
    • ½ ounce Cognac

    Instructions

    • Place the sugar in a coupe glass and add the bitters.
    • Pour in the Cognac.
    • Top with chilled Champagne and serve immediately.
