The applejack rabbit is a marvelous cocktail. Simple, sumptuous, and incredibly well-balanced, it also makes a perfect drink for celebrating the autumn harvest season. It starts with an ambrosial base of applejack or Calvados and then combines the lively tartness of fresh citrus with the rich sweetness of maple syrup. The original recipe dates back nearly a century, and its longevity is a testament to the fact that the best cocktails are often both surprisingly easy to prepare and luxurious to sip.

Applejack rabbit served in a coupe glass garnished with a thin slice of apple sitting on a worn wooden outdoor table strewn with a few yellow fallen leaves.

If you're in the market for more easy cocktails to celebrate autumn and all things apple, you may also enjoy a simple Calvados & Tonic.
