    Prosciutto Wrapped Figs

    These prosciutto wrapped figs are both incredibly simple and astonishingly delicious. After being anointed with a bit of olive oil and balsamic vinegar, they are then roasted until gorgeously burnished in color, delightfully crisp around the edges, and lusciously jammy in the center. These irresistible little parcels may be messy to eat, but nobody will mind....they're entirely worth the napkins.

    • fresh ripe figs
    • prosciutto
    • extra virgin olive oil
    • balsamic vinegar

    Instructions for Prosciutto Wrapped Figs

    Begin by washing the figs and trimming off the little stems.

    Then wrap each fig in prosciutto, overlapping sufficiently for the prosciutto to remain in place around the figs.

    Place them in a baking dish.

    Brush each prosciutto wrapped fig generously with olive oil.

    Then drizzle them with balsamic vinegar.

    Roast in the oven at 425℉ for about 10 to 15 minutes, or until the prosciutto has crisped around the edges and the figs have thoroughly warmed through.

    Allow to cool briefly before serving.

    Hint: Don't be tempted to bite into one these tempting little morsels when they've just come out of the oven. I recommend giving them at least a few minutes to cool, as those fig juices can get really hot! (Speaking as a gal who has burned her tongue enjoying many a roasted fig.)

    Equipment

    You will need a small baking dish in which to roast these prosciutto wrapped figs. Porcelain or ceramic is best here, since the balsamic vinegar has a tendency to burn more quickly in a metal pan. I usually reach for my Apilco porcelain deep oval roaster (No. 6) when I'm making these juicy little beauties, and it measures approximately 12x9 inches.

    Top tip

    If you're wondering what variety of fresh figs to use here, I would suggest that black mission is the best choice for prosciutto wrapped figs. Their intense sweetness serves as a perfect foil to all that salty prosciutto!

    Instructions

    • Wash the figs and trim off the stems.
    • Wrap each fig in prosciutto, overlapping sufficiently for the prosciutto to remain in place around the figs. Place them in a baking dish.
    • Brush each prosciutto wrapped fig generously with olive oil, and then drizzle them with balsamic vinegar. (No need to be precise about the amount of olive oil and balsamic you're using here.)
    • Roast in the oven at 425℉ for about 10 to 15 minutes, or until the prosciutto has crisped around the edges and the figs have thoroughly warmed through. Allow to cool briefly before serving.
