    This strawberries and cream cocktail makes for a fabulous dessert drink. Combining the lush flavor of ripe berries and the delicate fragrance of fresh wildflowers, it's like sipping the very essence of summer. Perfect when you want something a bit sweet and boozy at the end of a meal, the classic combination of strawberries and cream feels like a particularly perfect refreshment for a warm lazy evening. And the secret to this lovely little elixir? It couldn't be more simple. The trick is just steeping some strawberries in a generous splash of elderflower liqueur and then tossing the whole fruity and floral brew into a cocktail shaker with some good gin and a dash of cream. The result is pure summertime cocktail magic.

    Instructions

    Hull and slice the strawberries. Place them in a small bowl (reserving a few slices for garnish) and then pour over the elderflower liqueur. Let them macerate for at least 15 minutes (or cover and refrigerate for up to a day).

    Transfer the mixture of strawberries and elderflower liqueur into a cocktail shaker.

    Then add the gin.

    Finally, add the heavy whipping cream.

    Toss in some ice, shake vigorously, and strain into a coupe glass.

    Garnish with a slice of strawberry and serve.

    Hint: The more ripe your strawberries, the more pink this cocktail will appear once everything has been shaken together. But if you prefer your drink to be not just pale pink, but really pink (and extra fruity), you can purée the strawberries instead of macerating them in the elderflower liqueur for a more deeply pink presentation.

    Variations

    • The Gin - The Botanist is one brand that works really nicely here, but feel free to use your favorite dry gin.
    • The Elderflower Liqueur - I recommend St. Germain. However, if you would like your drink on the slightly less boozy side, you could also use elderflower syrup in place of the liqueur.
    • The Cream - For a lighter version of this cocktail, substitute half & half for the heavy whipping cream.

    • Transfer the mixture of strawberries and elderflower liqueur to a cocktail shaker. Then add the gin and heavy whipping cream.
