    Honey Simple Syrup

    This is so straightforward that it can hardly be called a recipe, but honey simple syrup is undoubtedly one of the most useful little tricks I have ever learned in the kitchen. When you combine equal parts honey and water, and then gently stir for just a couple of minutes over very low heat until the honey has dissolved, what you end up with is a fantastically versatile and complex syrup that will mix effortlessly into anything. It is indispensable for sweetening all kinds of cocktails, marinades, dressings, and more. Honey simple syrup is a truly workhorse ingredient that will up your kitchen game and substantially enrich your culinary repertoire...just like pure liquid gold.

    Ingredients for Honey Simple Syrup

    • honey (preferably raw)
    • water

    Instructions

    Pour the honey into a small saucepan.

    Then add the water.

    Place the saucepan over very low heat and stir just until the honey dissolves, about 2 to 3 minutes.

    Allow the syrup to cool briefly, and then pour it into a clean jar.

    Once the syrup is completely cool, cover the jar.

    Hint: Since this syrup is made from equal parts honey and water, it can easily be scaled up or down to suit your needs. Making cocktails for a crowd? You can simply double, triple, or quadruple it. Just need a splash or two to sweeten up a marinade? You can also half it of course.

    Equipment

    Any small saucepan will do here when mixing up this syrup over the stove, but my vessel of choice is a butter warmer. With its pixie proportions and handy side spouts, it's just perfect for the job. And once the syrup is done, I recommend a lidded glass jar for purposes of storage.

    Storage

    Honey simple syrup will keep in the refrigerator for at least a month. (And I must confess, I've also kept it on my kitchen counter for weeks at a time...so far, so good.)

    Top tip

    The variety of honey that you use here will greatly impact the flavor of your syrup. As a general rule, light colored honey will produce a rather mild flavored syrup, while dark colored honey will typically offer more richness and complexity.
