    Strawberry Burrata Salad

    Featuring lusciously flavored berries and the dreamiest of cheeses, strawberry burrata salad is the luxury version of simple mixed greens. This salad begins with sliced strawberries doused in a tangy sweet balsamic dressing. All those dark glossy berries are then spooned over fresh creamy burrata resting on a tender bed of bright green baby spinach. As if this attractive combination weren't already alluring enough, a scattering of toothsome pine nuts and fragrant ribbons of basil then crowns the whole sumptuous tableau. This is one of those recipes to trot out when you want something simple to prepare and stunning to behold.

    Ingredients for Strawberry Burrata Salad

    • extra virgin olive oil
    • balsamic vinegar
    • honey
    • fresh strawberries 
    • fresh baby spinach
    • burrata
    • pine nuts
    • fresh basil 
    • kosher salt and freshly ground black pepper

    Instructions

    Thinly slice the strawberries and chop the basil into ribbons.

    In a small bowl, whisk together the olive oil, balsamic vinegar, and honey until emulsified into a dark glossy dressing.

    Add the strawberries to the bowl, toss to coat with the dressing, and let sit for 10 minutes.

    In the meantime, strew the spinach across a shallow bowl or plate.

    Then place the burrata in the center and gently cut it in half, letting each side fall open to expose the creamy interior.

    Spoon the strawberries and dressing over the spinach and burrata.

    Finally, scatter the basil and pine nuts over the top and season to taste with salt and pepper.

    Hint: Serve this salad with a bit of crostini or fresh bread alongside, just in case there are any remnants of that tangy sweet dressing and creamy burrata to be soaked up once all the greens have been forked away.

    Substitutions

    • The Spinach - A peppery bed of arugula or crisp gem lettuce would be lovely alternatives here.
    • The Pine Nuts - Try sliced almonds or pistachios in place of the pine nuts, if you prefer.
    • The Strawberries - In a mixed berry kind of mood? Add a few fresh blueberries and/or blackberries.

    • 1 teaspoon honey
    • ½ cup fresh strawberries hulled and thinly sliced
    • 1 cup fresh baby spinach
    • 1 tablespoon fresh basil chopped into ribbons
    • 1 tablespoon pine nuts
    • 2 ounce ball burrata (room temperature)
    • kosher salt and freshly ground black pepper

    Instructions

    • In a small bowl, whisk together the olive oil, balsamic vinegar, and honey until emulsified into a dark glossy dressing.
    • Add the strawberries to the bowl, toss to coat with the dressing, and let sit for 10 minutes.
