Strawberry Burrata Salad

Featuring lusciously flavored berries and the dreamiest of cheeses, strawberry burrata salad is the luxury version of simple mixed greens. This is one of those recipes to trot out when you want something simple to prepare and stunning to behold.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • ½ cup fresh strawberries hulled and thinly sliced
  • 1 cup fresh baby spinach
  • 1 tablespoon fresh basil chopped into ribbons
  • 1 tablespoon pine nuts
  • 2 ounce ball burrata (room temperature)
  • kosher salt and freshly ground black pepper

Instructions

  • In a small bowl, whisk together the olive oil, balsamic vinegar, and honey until emulsified into a dark glossy dressing.
  • Add the strawberries to the bowl, toss to coat with the dressing, and let sit for 10 minutes.
  • Strew the spinach across a shallow bowl or plate. Place the burrata in the center and then gently cut it in half, letting each side fall open to expose the creamy interior.
  • Spoon the strawberries and dressing over the spinach and burrata. Then scatter the basil and pine nuts over the top. Season to taste with salt and pepper.
  • Serve with a bit of crostini or fresh bread to soak up any remaining dressing and burrata.
