Equipment

  • large rimmed baking sheet (or large shallow baking dish)

Ingredients

  • ½ cup maple syrup
  • ½ cup soy sauce or tamari
  • 2 teaspoons fresh garlic, minced or grated
  • 2 teaspoons fresh ginger, minced or grated
  • kosher salt and fresh ground black pepper
  • 8 six ounce salmon fillets (preferably coho or sockeye)

Instructions

  • Set an oven rack about 6 to 8 inches below the broiler, and then preheat it.
  • In a small bowl, whisk together the maple syrup, soy sauce (or tamari), garlic, and ginger until the glaze is well combined. Set half of the glaze mixture aside in a separate bowl (for spooning over the fish when served).
  • Arrange the salmon fillets on a foil lined baking sheet. Season with salt and pepper. Then brush half of the glaze evenly over the fish.
  • When the broiler is ready, place the salmon in the oven and cook for about 7 to 10 minutes, or just until flaky and opaque throughout.
  • Serve the salmon with the reserved glaze spooned over the top.
