Grapefruit Mimosa

Bold, unconventional, and multi-faceted in flavor, this grapefruit mimosa is like the Katharine Hepburn of the brunch cocktail world. The flavor is a bit sweet and a bit tart, slightly astringent, and punctuated with a gutsy dimension of rosemary. In other words, this variation is an excellent alternative to the straightforward classic version. You can certainly leave out the rosemary if you prefer...but it contributes a delightful woodsy depth, so I highly recommend it!

Ingredients

  • 3 ounces fresh grapefruit juice
  • 1 ounce rosemary simple syrup (or plain simple syrup)
  • 3 ounces Prosecco or Cava
  • fresh rosemary sprig (or mint leaf), to garnish

Instructions

  • Pour the grapefruit juice into a champagne flute.
  • Add the simple syrup.
  • Top with Prosecco or Cava.
  • Garnish with rosemary sprig (or mint leaf) and serve immediately.
