Slightly floral, slightly bitter, and slightly strong, the white Negroni has become a modern classic for good reason. A wonderfully balanced aperitif, it makes a perfect prelude to a leisurely dinner. The usual combination of gin, blanc vermouth, and gentian liqueur is bracing, but still approachable. Made from the root of the dramatically beautiful, but incredibly bitter, alpine gentian flower...a little goes a long way. This version is made with genepy instead of gentian, which comes from artemesia and lends a more herbal flavor. The result is a drink with a bit less tang...think more chamomile than dandelion.
